Introduction

Chinese-owned Mexican restaurants have been popping up all over the city throughout the last few decades. The first restaurant of this kind, Fresco Tortilla, was set up in 1991 on Lexington Avenue by Chinese immigrant, De Shi Zheng. Since then, many other restaurant owners, also Chinese, have launched similar businesses under copycat names, such as Fresco Tortillas, Fresh Taco, Fresh Tortillas, and other related names. With this phenomenon comes questions of why these owners pursued non-native cuisines, how these restaurants are staffed, where these restaurants are located, and, perhaps most importantly, whether or not the food is authentic.
